Wine Notes: Nutty, salty, savoury and quite rich owing to its unique to the region ageing under a layer of yeast with adds some wild but moreish flavours.
Farming Notes: Predominantly organic vines (except on steep slopes where erosion necessitates the use of herbicide of manual weed management) on a complex mix of limestone, marls and clays.
Producer Notes: After training in New Zealand, Châteauneuf-du-Pape and Champagne Marie-Pierre Chevassu-Fassener now farms her father’s vines in the Jura.
