Wine Notes: A thumbs width (on a map) to the east of Burgundy sits the quiet pioneers of Jura. Wines that have risen through obscurity via Natural wine bars to being an important part of the cellar. This is made ‘sous-voile’ I.e under a veil of flor, a blanket of yeast which imparts distinct salinity and nutty character to the Chardonnay. It’s smoky, rich, salted popcorn vibes are incredibly moorish.
Farming Notes: Predominantly organic vines (except on steep slopes where erosion necessitates the use of herbicide of manual weed management) on a complex mix of limestone, marls and clays.
Producer Notes: After training in New Zealand, Châteauneuf-du-Pape and Champagne Marie-Pierre Chevassu-Fassener now farms her father’s vines in the Jura.
