Wine notes: This is a unique rosé made by the exacting Apostolos Thymiopoulos. It tip toes the fine line between an orange wine and a rosé.

To say that this is unlike most rosés you’d have tried before is an understatement. This isn’t the same league, it’s not even the same sport. It’s 100% a food wine. Mouth filling, moorish with an attractive, spicy note. This would be a great wine with spicy food.

Farming notes: Farmed organically and following biodynamic practices. Wild flora is used to stimulate subterranean and overground fauna. 

Production notes: Grapes are hand picked, destemmed, macerated for 12 hours, fermented with wild yeast for 5-6 months and then matured in old oak for 4-6 months.
